creamy pepper sauce

For the Sauce:
1. Add the mayonnaise and next 9 ingredients to a mixing bowl and stir until combined (a blender may be needed if using the adobo pepper). Refrigerate until ready to use.

For the Smash burgers:
1. Cut the ground beef into 6-8 equal sized pieces of ground beef (I try to keep the patties to ¼ to 1/3 lbs). Knead the meat into equal-sized meatballs and season with salt and pepper to taste.
2. place the meatballs on the griddle and allow to cook for 1-2 minutes. Using a spatula, press down on the meatballs to flatten (tip: place parchment paper on top of the meatball to prevent it from sticking to the spatula). Next, top the smash burger with a handful of the sliced onions. Repeat this process with the remaining meatballs. Allow them to cook for 3-4 minutes, then flip the burgers, top with cheese, and continue cooking for about 5 minutes (the onions will be fully cooked within that time as well).

To Finish:
1. Place a hamburger bun on a plate and slather with the prepared sauce. Next, top with 2 cheeseburger patties. After that, top with more prepared sauce and enjoy!
