For the Lemon-Pepper Sauce:
1. Add the olive oil, lemon zest & juice (reserve the zest of 1 lemon) and garlic to a mixing bowl and stir until combined. Season with salt & pepper as needed.
For the wings:
1. Preheat grill to 375 degrees. Meanwhile, slather wings with olive oil and coat with seasoning until well covered. Place the wings in a rotisserie grill basket (this is a nice to have, not a necessity).
2. Once the grill is preheated, add the rotisserie grill basket, and cook until the wings develop a nice golden-brown color, and the skin becomes crispy. This should take at least an hour and the internal temperature will be upwards of 185 degrees. (Note: if not using a grill basket, the time will likely be shorter, and wings need to be flipped halfway through). Once this occurs, remove the wings from the grill.
To Finish:
1. Add the wings to a large mixing bowl and top with lemon-pepper sauce. Toss until the wings are well-coated.
2. garnish with remaining lemon zest, serve with your sides of choice and enjoy!
